Chairman Mao’s Braised Pork (毛氏红烧肉)
This is well-known as Chairman Mao’s favourite dish. The chef who invented it took traditional Hunan braised pork and used superior pork belly to absorb the essence of the spices and flavourings. Simmered for hours, the result is flavourful with many more dimensions than can be tasted in traditional braised pork.
Chongqing Fish with Pickles (重庆酸菜鱼)

The resulting Ba Bao Cha was called Imperial Eight Treasure Tea (宫廷八宝茶) and only available in Imperial palaces. Today’s Ba Bao Cha is available to everyone,” said Ms Liu.
