Pork, Chicken, Cheese Tamales every Saturday; extra: cheesecake!
In Mexico, tamales begin with a dough called masa, or a masa mix, such as Maseca, and are generally wrapped in corn husks or plantain leaves before cooking. They usually have a sweet or savory filling and are typically steamed until firm.
Few countries have such an extensive variety of tamales as Mexico, where they're considered one of the most beloved traditional foods. Almost every region and state in the country has its own kind of tamal.
Tamales are a favorite comfort food in Mexico, eaten as both breakfast and dinner, and often accompanied by hot Atole or Champurrado, maize-based beverages of indigenous origin. Street vendors can be seen serving them from big, steaming, covered tamaleras.
Pork (Puerco) Tamales have a red sauce made with Chile Guajillo (Colorado); Chicken (Pollo) Tamales have a green sauce made with tomatillos and jalapenos; Cheese (Queso) Tamales are made cheese and jalapenos. All fillings are placed on the masa and wrapped in the husks, then steamed early Saturday morning.
Some weeks we offer Dulce Tamales, which are sweet tamales with anise, pineapple and pecans - these are a real treat you will have a tough time finding somewhere else!
