We are dedicated to preserving the art, technique, and culture of Tuscan style cheese making. After years of preparation we are presenting our new cured meats, or salumi. Our olive oil, fig jam and wines are also made with love.

Our cheeses are handcrafted every step of the way from milk collection to the final stage of maturation. We use only raw milk from our sheep and cows to ensure the unique flavor of our cheeses. In addition cheeses are made completely by hand: the way it's been for generations. This year we also began producing a selection of cured meats.
