Finally a nose to tail restaurant is opening soon in Singapore! WOLF serves honest food with bold flavors, from chops to steaks, hearts to livers.
Noted Michelin-starred Chef, Fergus Henderson, of St. John’s fame once said “It's only polite really if you knock an animal on the head to eat it all: tripe, heart, feet, ears, head, tail. It's all good stuff." We really couldn’t agree more. Therefore, The Privé Group has opened Singapore’s first nose to tail restaurant in the bustling Club Street area.
Nose to tail eating is centred on restoring respect for the whole animal and realising how delicious the lesser known parts are. Because the whole animal is consumed and none of its parts are wasted, proponents have long championed it as an ecologically sound and sensible practise, which in recent years has seen a resurgence in popularity in places such as London and America.
WOLF is also the realisation of Chef de Cuisine, Alysia Chan’s dream. Ever since embarking on her culinary career, it has been Alysia’s goal to open a nose to tail restaurant. Back from a stint at Fergus Henderson’s world-famous St. John in London and drawing inspiration from April Bloomfield of The Spotted Pig in New York and Chris Cosentino of Incanto in San Francisco, Alysia adopts an honest down-to-earth approach while boldly playing with textures and combinations to accentuate the flavours of each dish.
Simplicity is the cornerstone of WOLF’s menu and by drawing influences from British and French flavours, as well as from her experience in St. John, Alysia seeks to enhance the inherent flavours of each ingredient, whether meat or vegetable, to produce inspired dishes brimming with soul.
WOLF’s menu showcases pork, but also features beef, chicken, fish and other tasty creatures to suit all tastes and preferences. The exploratory gourmand can definitely indulge in a selection of offal options, including head, tongue and heart, while the not-so-adventurous can enjoy more conventional steaks and fish. Highlights from the menu include Grilled Beef Hearts, Grilled Ox Tongue and Wood-Smoked Kurobuta Pork Chops.

Coupon parking is available along Gemmill Lane & Club Street, as well as in the public carpark at Club St. Alternatively, you can also conveniently park at M-Park automated parking at Club St (150m away), China Square Central (200m away, across Cross St) or at the URA East Wing Carpark (400m away via Club St & Ann Siang Rd). Please note that a part of Club St is closed to traffic on Fridays and Saturdays from 7pm to 1am.
