CHRIS THORNTON | Head Chef & Owner
Chris has always had a passion for food. Starting off working in kitchens through high school, he began his training at Peppers Guest House in the Hunter Valley under Jamie Hartcher. After 12 months, Chris moved to Newcastle to help open the toqued Restaurant II with Newcastle incumbent Peter Bryant. During his apprenticeship, he won the Brett Graham Shield, giving him the opportunity to travel to London for work under the acclaimed Michelin Star Chef and fellow Novocastrian Brett Graham. After staging at the Ledbury for a month, Chris returned to complete his apprenticeship before heading back to the Ledbury. After spending sometime with Brett developing his craft, Chris came home to Newcastle and took over as head chef at Bistro Tartine where he fined tuned his skills and created his own style. Two years on and his dream to bring michelin quality food to Newcastle is realised in Restaurant Mason
