Madison began her formal culinary studies at the Institute of Culinary Education (ICE) where she earned her Certificate of Culinary Arts in 2006. She attended the Wilton School in Chicago, Illinois and also studied sugar sculpture and design with Nicolas Lodge, part of the international Sugar Art Collection, in Atlanta, Georgia. She has studied privately alongside world-renowned sugar artist Betty Van Nostrand, and counts her as a mentor and friend.
In 2010 Madison moved to London to apprentice with Alan Dunn, the father of sugar artistry and author of more than fourteen books on sugar craft. Under his guidance, she honed she skills and developed her own style and variation of his botanically correct flower masterpieces. While in London, Madison also studied with Europe’s most well known cake artists, such as; Vivienne Lee, for royal icing; Maisie Parrish, for figure modeling; Debbie Brown, for decorative sculpture; and Javier Mercado, for blown and pulled sugar.
Madison Lee’s cakes have been honored in international competitions in New York City. In 2010 and 2011, she won blue ribbons and gold medals from the Societe Culinaire Philanthropique. In 2010 she also won a gold medal from Paris Gourmet. In 2011, her unique ribbon and flower adorned cake won the blue ribbon at the Connecticut Cake Competition.
