In 2009, Stefan Ching – from New Zealand by way of London –
opened a gastropub called Clerkenwell, on the Lower East Side
in Manhattan, where he served as owner and manager. From
the time it opened, the Clerkenwell received favorable mention
in major publications such as the Sunday Times, the Village Voice,
and the Michelin Guide.After two years, Stefan decided to
rebrand his restaurant.
Clerkenwell was reborn as Kupersmith, a sausage-and-beer-centric
venture. The rebrand allowed Stefan to revisit his passion for
the art of sausage making. His enthusiasm for butchery stems from
the time he spent training as a butcher in New Zealand, which began
at age 16. “I grew up in a very rural town, we had access to amazing
farms’ animals, as well as wild game such as bore and venison which
made it all the more exciting. I’ve had a passion for it every since.”
