Zing, Zilla and Zest!
Manoj is passionate about real Indian cuisine, having trained with leading Indian hotel groups such as Oberoi and ITC Sheraton and then worked with London restaurants Chutney Mary (deputy head chef) and Veeraswamy (head chef). He has travelled extensively throughout India, experiencing the best Indian food in peoples’ homes, Maharajas’ palaces and from street vendors. These have all influenced his menu blending regional recipes and traditional ingredients with modern techniques, flavours and presentation.
Dishes display Manoj’s signature lightness of touch and understanding of flavour. The tandoori oven is used imaginatively, not only for the obvious candidates such as chicken and lamb, but also for fruit (figs served with apple crumble for example) and vegetables (aubergine & paneer). Dishes are constantly evolving and watch out for the regular food fiestas, celebrating some more unusual aspects of Indian cuisine such as game, or food from Maharashtra, Manoj’s home province.
