Chef Prakit Prem-on

Success in New York doesn't come around often. However,it is no stranger to Chef Prakit Prem-on. Like most great chefs, Chef Prem-on realized his passion for culinary at a very young age. He started his career as a sous chef at the Rama Hyatt Hotel in Bangkok, Thailand, where he studied directly under many great chefs to learn all aspects of fine cuisine. It was not long until he was promoted to executive chef at the hotel. He then spent over ten years cultivating his culinary skills in French, Italian, and his native Thai cuisine.
In 1974, Chef Prem-on left Thailand in hopes of pursuing a career in New York City. In 1979, when Thai food was not long ago introduced to patrons of this great city, he and his wife opened Siam Inn ( Was Red Garlic ) With the success of Siam Inn, Sala Thai came around in 1983. In 1991, Chef Prem-on expanded the Siam Inn experience by creating Siam Inn Too. In 1994, he moved back home to bangkok to tackle the restaurant industry there. After a decade of living in Bangkok, he came back to New York in 2003 to create Blue chilli.
In 2005, he opened Prem-on Thai in downtown Manhattan.
The leases for some restaurant are up. So now there are three restaurants left which are
- Siam Inn ( Blue chili )
- Sala thai
- Charm
We changed the name from Blue Chili to Siam Inn because chef wants to focus on his native cuisine which is Thai. We do not want any confusion so we chose to stick with the original name which is Siam Inn. We are still the same management and kitchen staffs as Blue chili.
